We invite you to this autumn's event at Laboratorio, an exclusive dinner, the Chef's table of the Italian Michelin-starred chef Stefano Ciotti and the owner of the famous restaurant Nostrano di Stefano Ciotti. On this occasion you will be able to indulge in a private dining experience for only 20 people.
During the evening, you will have the unique opportunity to watch the culinary magic unfold before your eyes in our open kitchen, as Chef Stefano Ciotti prepares a modern menu honoring the ingredients and Italian tradition.
Our journey begins with a captivating starter that celebrates the richness of the ocean. Juicy, colorful prawns take center stage.
Next, Stefano will prepare Spaghetti Mancini 'Underground'", a signature dish that combines the rich salty essence of sea urchins with creamy Pecorino di Fossa fondue.
The culinary experience will continue with the preparation of crispy cabbage with oysters, an innovative blend of flavors and textures. For the main course, the chef will present a masterpiece of Italian cuisine. The Guinea fowl prepared in a delicate white wine sauce is a testament to the chef's commitment to traditional Italian flavors and culinary excellence. The sweet finale - caramelized Maritozzo combined with velvety Moretta Fano ice cream.

Stefano Ciotti, a Michelin-starred chef, has a remarkable culinary journey. Starting his career, he trained under renowned chefs in Italy, including Luigi Sartini and Alois Vanlangenaeker. He earned his Michelin star in 2010 at Carducci 76/Vicolo Santa Lucia restaurant. Over the years, he's received several awards, including recognition at the Identità Golose convention and opening his own Michelin-starred restaurant, "Nostrano di Stefano Ciotti," in 2017. He continues to shine in the culinary world, recently opening "Veritas" in Doha and joining esteemed associations like Le Soste and Euro-Toques Italia.
